The Rice Capades…

After my parents got married, my mom, Eileen, was determined to become the perfect 1950s housewife, despite her lack of kitchen skills. One evening, she decided to impress her mother-in-law by making rice as a side dish for dinner. Little did she know, this would turn into one of her most memorable kitchen mishaps.

With her characteristic aversion to reading instructions or measuring anything, mom started a pot of water on the stove to boil. As it bubbled away, she began adding the entire bag of rice without a second thought.

As the rice started to absorb the water and expand, it quickly became clear that she had made a grave error. The rice began to overflow the pot, cascading onto the stovetop and floor.

Thinking quickly, she grabbed another pot to contain the excess rice, but it quickly filled up too. Frantically, she grabbed yet another pot, trying to balance them all as the rice continued to spill out. It was a scene straight out of "I Love Lucy"!

Despite her best efforts, there was simply too much rice. They ended up with pots and pots of cooked rice, enough to last for weeks. The dinner may not have gone as planned, but it certainly provided plenty of laughs and became a cherished memory in our family's history.
